Until the 1960s, tacos were practically unknown outside Mexico, but within fifty years the United States had exported Tacos around the world. This book examines the history of how Mexican Americans helped make Mexican food a global phenomena and delves into the complex interplay of indigenous foods, industrial appropriation, and the embrace of a national cuisine within Mexico.
